Big Dance Donuts

The UTES are going to the Big Dance! Last night they won the Mountain West Conference tournament in Las Vegas, by beating the San Diego Aztecs 52-50. Just when we thought life couldn’t get better, with a football team that won the Sugar Bowl, and went 13-0…now we have a basketball team that gets into the NCAA tournament for the first time since 2004. Yippee!

Celebrate by making Big Dance Donuts. These yummy, Krispy Kreme Copycat donuts are a great Sunday night- Selection Sunday treat.

Krispy Kreme Copycat Donuts

Ingredients

Donuts:

  • 2 1/4 ounce packages yeast
  • 1/4 cup water
  • 1 1/2 cups lukewarm whole milk scalded, then cooled
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 2 eggs
  • 1/3 cup shortening melted
  • 5 cups all-purpose flour
  • canola oil

Creamy Glaze:

  • 1/3 cup butter
  • 2 cups powdered sugar
  • 1 1/2 teaspoons vanilla
  • 4-6 tablespoons hot water

Chocolate Frosting: (optional)

  • 1/3 cup butter
  • 2 cups powdered sugar
  • 1 1/2 teaspoons vanilla
  • 4-6 tablespoons hot water
  • 4 ounces milk chocolate chips or semi-sweet chocolate chips

Instructions

  1. Dissolve yeast in warm water in large bowl. Add milk, sugar, salt, eggs, shortening, and 2 cups flour. Beat on low for 30 seconds, scraping bowl constantly. Beat on medium speed for 2 minutes, scraping bowl occasionally. Stir in remaining flour until smooth. Cover and let rise until double, 50-60 minutes.
  2. Turn dough onto floured surface; roll around lightly to coat with flour. Gently roll dough 1/2-inch thick with floured rolling pin. Cut with floured doughnut cutter. Cover and let rise until double, 30-40 minutes.
  3. Heat vegetable oil in deep fryer or large, heavy pot to 350 degrees. Slide doughnuts into hot oil with wide spatula. Turn doughnuts with tongs as they rise to the surface. Fry until golden brown, about 1 minute on each side. Remove carefully from oil (do not prick surface); drain.
  4. Dip the doughnuts into creamy glaze set on rack then when slightly cooled – if using chocolate frosting, spread chocolate frosting on top.

Creamy Glaze:

  1. Heat butter until melted. Remove from heat. Stir in powdered sugar and vanilla until smooth. Stir in water, 1 tablespoon at a time, until desired consistency.

Chocolate Frosting:

  1. Heat butter and chocolate over low heat until chocolate is melted. Remove from heat. Stir in powdered sugar and vanilla until smooth. Stir in water 1 tablespoon at a time, until desired consistency.
  2. makes about 3 dozen donuts

Recipe Notes

-I didn’t make the chocolate glaze, even though I’m a chocolate lover, I thought the chocolate frosting was a little overkill.

-I don’t have a donut cutter. Just use a biscuit cutter or glass, and poke your finger in the middle and form a little round hole.

  1. Okay Bountiful lady,

I made the taco chicken black bean salad tonite and it was a hit. I used the lowfat dressing. delicious.

you are killing me the ute talk with those donuts though, cause even though I live in LA, I am a BYU grad from BAMA and still crying about the sugar bowl…that was also the best year bama’s had in a while too….

still a food fan, even if you wear the wrong shade of crimson 🙂

  2. Crazy Lady- Glad you liked the salad! Sorry about the Sugar Bowl…well not too sorry. Did you know the lady who dances at the end of the 3rd quarter at all of the Ute football games is called the Crazy Lady? I’m sure she’s on YouTube…We love her!

  3. I was glad to hear you made these a while ago and not on the day that you posted the recipe and pics. I was feeling bad that I wasn’t invited to partake…Now I’m better.
Thanks for your recipes…I may even make one , one of these days.

  4. I’m trying to figure out how many tsp of yeast to use in this recipe? Do you know that? I buy yeast in bulk and not I’m packets.
    Thanks!
