This is one of Di’s easy and yummy go-to recipes. It’s the perfect accompaniment to our Mo Day main dish, which I’ll post later this week. Another dish Mom’s going to luh-huv.

Parmesan Baked Potatoes

Parmesan Baked Potatoes

Ingredients

  • 6 tablespoons butter melted
  • 3 tablespoons fresh grated Parmesan
  • 8-10 medium red potatoes scrubbed and halved

Instructions

  1. Pour butter into a 9×13 pan. Sprinkle grated cheese into pan. Place potatoes cut side down on top of cheese. Bake at 400 degrees for 40-45 minutes or until tender. Sprinkle generously with Kosher salt and pepper. Serve while hot. You may bake these and keep warm, covered with foil in a 200 degree oven.

  1. This is one of my favorite ways to cook potatoes. I loved being a Mom when my girls were little. I loved to dress them up in frilly matching outfits. I love even more that now they are older, we shop together like friends, and they dress me up in the latest fashions.

  2. When I was younger, I never thought I'd be content to be a stay at home mom, but now that I am, I wouldn't have it any other way! I'm so fortunate to be able to see them when they wake up, hear about their day when home from school, and tuck them into bed at night!

  4. My mom is so amazing-she is positive, fun, curious about life, flexible (can do the splits at 80 years old), unselfish and beautiful. I am so grateful for her. So glad I can be a mom, and want to be more for my kids like my mom is for me.

  7. My mom is just … she just amazes me. Day in, day out, she is the most caring, nurturing person I've ever met. Even though I'm 47 years old, she still takes the time to remind me that I am still and always will be her little girl. I love you, Mama!

  10. What I love most about being a Mom is when the kids cuddle up next to you and are content. Having a 2 and 4 year old limits these moments, but makes them all the more special. That and when my 2 yr old says "You Best Mom Ever!" and my 4 year old tells me he loves me more than 500 plus 500 plus 100 cheesecakes. Now that's LOVE.

    I am new at the mom thing, but I love being able to hold and cuddle Bode…he is such a big baby boy, but he wants to be held and cuddled! I love seeing how much he changes and how his little personality emerges as he grows and learns!

  13. What I love the most about my Mother is that she has always been my biggest fan. No one else cheers for you louder or comforts better when there is sorrow. I hope to carry that on as I cheer my children on in life.

  14. I just love, love love it when they call your name in the middle of the night because they are scared. I want to scream, "That is my son!" when he hits a home run. I want to cry when he shows up on the honor roll, but then I want to cry when he won't pick up his clothes off the bathroom floor or get out of bed when it is time to go to school. It's a wonderful journey!

  15. Growing up I always wanted to 'be a mom.' What I love the most about being a mom now are the times I find myself doing the things I dreamed of as a child…
    Like the other day my baby was standing at my feet crying to be picked up, and I remembered so clearly in that instant watching a tv show as a child with that same scene and wanting so badly to quickly grow up and have a baby to cry at my feet! Oh it isn't always easy and good, but oh it is always rewarding.

  16. That she forgot how big of a brat I was as a teenager!! :O What I love the most is that she lives 5 hours away yet shows up for piano recitals, kindergarten "grandparents day", and has made it to the birth of every grandbaby. I'd be lost without her…

  17. I don't think I have ever heard my mother say one negative thing about anyone…seriously, she is an angel. I love being a mother for many reasons. The best is I have the opportunity to forget about myself and concentrate my time, energy and resources on 5 of the most remarkable and amazing children ever!

  19. My Mom is simply amazing! She had 10 children and was an incredible stay at home Mom. She can do anything and never passes up a chance to say how much she loves each of us. She's been diagnosed with MS and has never once complained, even when this horrible disease has taken things from her one at a time. She is my absolute hero! I love you, Mom!!

  21. Mother's Day is bittersweet. I lost my Mom in May of 2002, just a five days after Mother's Day. It was the saddest day of my life. I was left with great memories of a woman who raised 3 children, on her own. She will always be remembered, for her carefree spirit, laughter and zany personality. The day she told me she had just 2 weeks to live, I broke down in tears and couldn't stop crying. My mom allowed me to cry for 2 minutes. She then looked at me and said, "Debbie, if you keep this up, I'm "going" right NOW!" I was startled back to my senses, and then we tumbled "into each" laughing hysterically. My Mom never let anything get her down! She treated people with respect. She couldn't tell the difference between a bag lady and the Queen of England. She loved everyone…equally. She made many sacrifices for her family and never once complained. I miss her.

  22. It was very obvious that family was the most important thing to my mom & that value has been passed on. I couldn't imagine my life without my four daughters. What a blessing to be surrounded by the love of my mother & to pass that love along to my girls.
