Chewy Chocolate Ginger Cookies

I am a huge fan of anything with the words “ginger” and “cookie” this time of year. Throw in CHEWY and CHOCOLATE and I’m sold. These Chewy Chocolate Ginger Cookies have been on our favorite cookie list for years.

What makes this ginger cookie so good? The combination of butter AND oil with molasses in this cookie gives it the amazing chewy texture we all love. These three ingredients together combine for the best ginger cookie! Chocolate takes this cookie to the next level. I’m a huge fan of ginger cookies; here are a few of my tested and true favorites: Giant Ginger Cookies, Ginger Snaps, and White Chocolate Dipped Ginger Cookies.

Can I use melted unsweetened chocolate in this cookie? No, this cookie calls for cocoa powder, which is not interchangeable with solid chocolate. It is best to use unsweetened cocoa powder!

Can I make this cookie ahead of time and freeze the dough or bake and then freeze? Yes! This cookie freezes well both as dough and baked. If freezing the dough, scoop into balls and place in an airtight container, label and freeze. When ready to bake, remove the cookies from freezer and preheat oven for at least 15 minutes.  Bake at 350 degrees regular bake or 300 degrees convection for 16-18 minutes For best results, do not thaw the dough before baking.

Do chewy ginger cookies store well on the countertop? Yes. This cookie stores well for days, up to a week on the countertop if kept in an air tight container. I feel like this cookie gets better with age!

Here’s what you need to make Chewy Chocolate Ginger Cookies:

  • canola or vegetable oil
  • unsalted butter 
  • granulated sugar
  • large eggs
  • molasses
  • unsweetened cocoa powder
  • all purpose flour
  • baking soda
  • sea salt
  • ground ginger, ground cinnamon
  • sugar granulated or powdered for coating cookies

How to make Chewy Chocolate Ginger Cookies:

  • Place butter, oil, sugar, egg, molasses and cocoa powder together in bowl and beat until smooth.
  • Mix in flour, soda, spices just until wet and dry ingredients are incorporated.
  • Roll dough balls in sugar and refrigerate for at least 30 minutes.
  • Bake as directed.

Ingredients

  • 3/4 cup unsalted butter (12 tablespoons) softened
  • 2 cups granulated sugar
  • 2 large eggs
  • 1/2 cup canola or vegetable oil
  • 1/2 cup molasses
  • 1/2 cup unsweetened cocoa powder
  • 3 3/4 cups all purpose flour
  • 1 tablespoon plus 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • sugar granulated or powdered for coating cookies

Instructions

  1. In a large bowl, or the bowl of a stand mixer, beat together butter and granulated sugar. Add eggs and beat until smooth.

  2. Add the oil, molasses and unsweetened cocoa. Beat until blended well.

  3. Turn off mixer. Add flour, baking soda, salt, ginger and cinnamon to wet mixture. Mix just until the wet and dry ingredients are incorporated on low speed. This takes about 10-15 seconds.

  4. Form dough into balls using a 2 inch scoop. Roll in granulated or powdered sugar. Place dough balls on an ungreased cookie sheet. Crowd cookies together on one cookie sheet and place in fridge for at least 30 minutes or up to 3 days.

  5. When ready to bake, preheat oven to 350 degrees.

  6. Place cookies on cookie sheets (about 6-8 per sheet), and slightly flatten with palm of hand. Bake for about 8-10 minutes or until set. The cookies will flatten as they cool. Sprinkle with additional sugar after removing from oven.

  1. I’m making these cookies right now, and four teaspoons of baking soda sounds like a LOT of baking soda. Is that a correct measurement?
