Christmas morning brunch is one of my favorite meals of the year!  I love a slow pace on Christmas day.  After all the hustle and bustle of the Christmas season, a delicious stress free brunch is what I’m all about.  This recipe for Christmas Morning Brioche and Tomato Bake is the perfect start to a memorable Christmas Brunch!  A little planning ahead can help you carry out a beautiful spread with very little work on Christmas morning.

This recipe is so simple, you might feel a bit guilty when you receive rave reviews and only spent a few minutes preparing! The thick sliced Brioche loaf makes the base of this dish beautiful. I made it without meat so it could be served with a sliced ham or thick cut bacon. Round the meal out with fresh sliced fruit and something sweet for a brunch your family will tuck away in their “Best Christmas Ever” memory bank.

Servings: 12 servings
A quick and easy dish for Christmas morning! Make the day before and bake in the morning.

Ingredients 

  • 1 loaf brioche, sliced into 1 1/2 inch thick slices
  • 1/4 cup melted butter
  • 1 cup grated Parmesan cheese
  • 12 eggs
  • 1 cup heavy cream
  • 1 cup milk, I used 1%
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • few drops hot sauce, Tabasco
  • 2 cups grated cheese, Cheddar, Jack or Swiss
  • 2 small tomatoes, sliced

Instructions

  • Grease a 9×13 Baking pan with vegetable spray or butter.
  • Place the sliced pieces of bread in the greased pan, the pieces with be close together.
  • Brush the slices of bread with 1/4 cup melted butter.
  • Beat the eggs, cream, milk, salt, pepper and hot sauce in a blender or large bowl until all ingredients are mixed well.
  • Pour the egg mixture over the bread in pan.
  • Sprinkle with grated Cheddar cheese.
  • Place the sliced tomatoes on top.
  • Sprinkle with grated Parmesan.
  • Cover with foil that has been greased (on side facing eggs) and place in refrigerator overnight or at least 6 hours.
  • When ready to bake, remove from refrigerator and preheat oven to 375, set rack in middle of oven.
  • Bake covered for 30 minutes, then carefully remove foil and bake for 20 minutes more.
  • Let sit for 10 minutes before serving.
  • Serve with Salsa.
  • If you cannot find Brioche, Challah or any other type of rolls without hard crust may be substituted (about 6-8 rolls torn into pieces)
