Tips for making the best easy Jalapeño Dip:

  • Make sure the Cream Cheese is room temperature for a smooth dip. If the cream cheese is cold, it will not blend well with other ingredients. If you forget to remove from the fridge early, remove from fridge, remove wrapper and place on a plate. Cut in half width-wise. Microwave for 20 seconds, let sit for one minute in the microwave without opening door. You can use low fat cream cheese, but I think this dip is best with regular, full fat cream cheese for creamiest texture!
  • Fresh jalapeños are best, but you may use canned in a pinch! One generous tablespoon of canned equals one fresh jalapeño.
  • Regular or low fat mayo work in this recipe. If you don’t have mayo, you may substitute sour cream or even Palin Greek yogurt (not sweetened).
  • I like the cheddar/mozzarella combination for this recipe, but Monterey Jack or Pepper Jack cheese also works. Mozzarella tends to yield the best stringy cheese when melted. Don’t use fresh (soft) mozzarella, it’s a bit too wet for this recipe. Choose mozzarella that is sold in a round or block shape that will grate.
