But TRUST ME, with a little love and preparation, they might just become your new go-to for a nutrient dense appetizer or snack!

Artichokes are packed with fiber, vitamins, minerals and antioxidants. They are a staple here in Spain and you can find them in almost every produce section in the U.S., especially in the spring!

The months of March through June are the peak season for artichokes. They are also usually on sale during the spring when they are most plentiful. So now is the perfect time to give this recipe to try!

How to choose a good artichoke

How do you tell the difference between a good and not so good artichoke? Look for artichokes that have tightly packed leaves and have some weight to them, this means that they haven’t dried out and there’s still moisture in the leaves. Brown spots or even discolored leaves are okay, this usually happens when the leaves are exposed to air.

What’s the Easiest or best Way to Cook an Artichoke?

There are a few different ways to cook artichokes: boiling, steaming, roasting, pressure cooking and baking. After testing a few different methods, steaming or cooking using the Instant Pot was by far the easiest and yielded the most flavor.

It really only involves trimming the artichokes, rubbing fresh lemon onto the leaves, adding water and then letting the IP work it’s magic!

How to Cook Artichokes in the Instant Pot

How to Steam Artichokes in the Instant Pot:

  • Wash and trim the artichoke leaves.
  • Rub the leaves with fresh lemon. 
  • Place the steamer insert in the IP along with water and lemon.
  • Place artichokes in a single layer on top of the steamer basket. 
  • Put the lid on and cook on manual high pressure.
  • Let the IP naturally release for 10 minutes. 
  • Make lemon butter sauce while artichokes are cooking.

How Much Water and cook time for artichokes in the Instant Pot?

The size of your Instant Pot will determine how much water you need. If using an 8-quart model, use 1.5 cups of water. A 6-quart model will need 1 cup of water. A 3-quart model will need 3/4 cup of water.

Also, this recipe calls for medium sized artichokes (10-12 oz). For smaller artichokes, the cook time will be about 10 minutes. For larger artichokes, the cook time will be about 30 minutes. Check the weight of the artichokes at the grocery store or weigh on your kitchen scale at home.

Ingredients 

  • 3-4 10-12 oz artichokes, rinsed in cold water
  • 1 1/2 cup water
  • 2 lemons for rubbing on leaves and making sauce

Butter and Lemon Sauce

  • 3 tablespoon mayonnaise or plain unsweetened Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon dijon mustard
  • pinch of sugar
  • pinch of garlic powder
  • pinch of salt

Instructions

Preparing the Artichokes

  • Remove the stem from each artichoke and slice off the top, you can use kitchen scissors to cut off the tip on each leaf.

Cooking the Artichokes

  • Rub the leaves with lemon.
  • Place water and lemon remnants in Instant Pot, along with the steamer basket.
  • Place the trimmed artichokes, stem side down on the steamer basket.
  • Seal the lid and make sure the release valve is in the "sealing" position. Cook on Manual High Pressure for 15 minutes. Depending on the size of the artichoke this may take up to 30 minutes.
  • Let the Instant Pot naturally release for 10 minutes after it has finished cooking. Carefully release any remaining pressure, and remove lid.
  • Serve immediately with lemon and butter sauce or your favorite veggie dip!

Lemon and Butter Sauce

  • Blend all ingredients together while artichokes are cooking.

Notes

  • A 6-quart Instant Pot usually fits about 3-4 medium sized artichokes.
