Celebrated Grant’s birthday with this simple chocolate snack cake tonight🎂
I remember my mom making snack cake out of a box when I was a kid. I loved that little square cake served warm with a bit of ice cream. It’s the perfect no-fuss, pantry friendly Sunday night or any night treat! Recipe isn’t on the blog yet, I’m sharing it here first 🫶🏽

Easy Chocolate Snack Cake
4 tablespoons unsalted butter, softened
1 cup boiling water
1 tablespoon canola or coconut oil
2 teaspoons vanilla
1⁄4 cup unsweetened cocoa powder
1 cup sugar
1 large egg
1 cup plus 1 tablespoon all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
powdered sugar
Preheat oven to 350 degrees and set the rack in the middle of the oven.
Line an 8x8 pan with parchment paper and spray with cooking oil.
Place butter in a medium size bowl. Pour hot water over the butter, stir until melted.
Add oil, vanilla, cocoa powder and whisk. Add the sugar and whisk until blended.
Add the egg and whisk again.
Add flour, baking powder, baking soda and salt. Whisk until smooth. Batter will be thin.
Pour into the prepared pan. Bake at 350 for 25 minutes or until toothpick inserted in center comes out clean.
Let cool for 10 minutes, sprinkle with powdered sugar and slice. May be served warm or after cooled.
*If baking in a humid environment (above 70% humidity) use 3⁄4 cup water and 1 cup flour.

Together our Bountiful Kitchen community raised over $25,500 to supplement nutrition at a school for children and grandchildren of the leprosy affected in India.
So many of you sent me messages of gratitude for the opportunity to give. We had donations that started at 58 cents and up. Thank you 🙏🏼 from the bottom of my heart. You have truly served the “least of these” as described in Matthew 25 🙏🏼

A few years ago, our Bountiful Kitchen community raised money to build a kitchen in a leprosy colony in India🇮🇳 with @risingstaroutreach Today, that kitchen feeds hundreds of people each week and continues to bless the lives of so many affected with leprosy🙏🏼

Each time I visit India, I’m overcome with a sense of humility and gratitude for all I’ve been given and ask myself how can I give back? Here, it seems like a small drop in a huge bucket of so many needs, and I wonder if my one tiny drop will make a difference?

This week, after visiting the school for children of the leprosy affected, I’ve thought about how we as an online community can help.

There is an immediate need for help with nutrition. In order to supplement what the children are receiving at mealtime and consistently provide protein (1 egg 4x a week and chicken twice a week) plus vegetables each day, the cost is 1,500 per month for the entire school or 18k total for one year. As you can see in the reel, the meals currently consist mostly of chipati (flat bread), 🍛 curry with potatoes, lentils and rice. Occasionally fruit and veggies are added.

Any extra donations collected will go toward one serving of milk daily per child. Milk is not a part of regular meals currently due to cost 🥛
