Soft sugar cookie recipe from Cutler's Cookies in Bountiful, Utah.
Ingredients
1 1/2cupsunsalted butter, slightly softened
2cupssugar
3eggs
2teaspoonsvanilla
2teaspoonsbaking powder
1/2teaspoonsalt
3cupscake flour
2cupsall purpose flour
Butter Cream Frosting:
1cupunsalted butter
4-5cupspowdered sugar
milk
1teaspoonvanilla
few dropsfood coloring
sprinkles for decorating, optional
Instructions
Place butter and sugar in a large bowl or the bowl of a stand mixer. Add eggs and vanilla and mix until blended well.
Add baking powder, salt, cake flour and all purpose flour to the bowl. Pulse the mixer a few times until the wet and dry ingredients are incorporated, mix on low for about 30 seconds to one minute.
The dough may be covered and placed in the fridge for up to three days or frozen at this point. Or, it may be rolled out immediately and cut into shapes.
Roll to about 1/4 inch thick and cut cookies into shapes. Bake at 350 for about 10 minutes.
Cookies are done when top is set and no longer looks wet or shiny. Edges may be slightly browned.
Let cookies cool, frost or glaze and decorate.
Buttercream Frosting
Place 1 cup butter and powdered sugar in a large bowl or bowl of a stand mixer. Mix until smooth.
Add a bit of milk (or cream or half and half) and vanilla, blend well. Add food color, a drop at a time as desired. Decorate with sprinkles immediately after frosting.
