Texas Grilled Chicken iwth lime Butter is easy to make in minutes! So good with rice or a salad and bread.
Ingredients
3 lbschicken, bone-in or boneless
Spice seasoning for chicken:
1tablespoonground cinnamon
1tablespoonchili powder or less if it is too spicy*
1tablespoonbrown sugar
1teaspoonunsweetened cocoa powder
salt and pepper to taste
3tablespoonsolive oil
1tablespoonBalsamic vinegar
Lime Butter:
1/3cupbutter, melted
1tablespoonsfresh lime juice
2tablespoonsminced onion
cilantro, chopped (optional)
additional sliced lime for serving
Instructions
In a bowl, combine all of the spice coating ingredients. Blend well. Dip each piece of the chicken into the spice mixture, place in a 9 x 13 pan.
Grill the chicken, over medium heat. About 7-8 minutes on each side, if boneless. More time needed if chicken is bone-in.
In another bowl, combine the butter and all of the lime butter ingredients. Mix well. Drizzle lime butter over chicken pieces on serving platter after cooked. Garnish with fresh lime slices.
Notes
I like to use a combination of chicken breasts and thighs. Bone in is best!
I have also used 4-5 large chicken breast halves, sliced in half, then pounded a little with a mallet to tenderize and thin out a bit for grilling.
Chili powder (brands) varies in degrees of spice or heat level! Test before using in this recipe by tasting a small amount with tip of your finger.
