Ginger Mango Slaw

  • 1 1/2 cups chopped cabbage
  • 1 tablespoon Olive oil
  • 2 tablespoons fresh ginger peeled, then chopped or grated
  • 1 tablespoon Mirin Sweet Rice Vinegar
  • 1 tablespoon White Balsamic or Cider Vinegar
  • 1/2 mango peeled and chopped
  • 2 tablespoons chopped red onion
  • Salt and pepper to taste


  1. Heat oil in a fry pan over medium high heat. Add chopped cabbage, stir just until limp, about 2-3 minutes. Add fresh ginger and cook for about another minute. Add Mirin and vinegar. Remove from heat. Add chopped mango and red onion. Serve immediately, or later at room temperature.
  2. Double to feed 4 as a side dish.
