15 Minute Coconut Protein Bites are easy to make and will satisfy a sweet tooth or fuel a post-workout pick-me-up.
Ingredients
1cup rolled oats (old fashioned, not quick oats)
1/3cupvanilla protein powder
1cup unsweetened shredded coconut, desiccated coconut may be used
1/2 cupnatural almond butter or peanut butter, we prefer almond
1/4cuphoney, or more to taste
½ teaspoon almond extract, (optional)
pinchsalt flakes
1tablespoonalmond milk
1/2cupcoconut, for rolling and covering the protein balls (optional)
Instructions
Pulse all ingredients - except the ½ cup coconut- in a food processor until combined. Roll in 1/2 cup coconut if desired. These ingredients can also be combined in a stand mixer with the paddle attachment, or stirred in a bowl with a wooden spoon.
Notes
Desiccated coconut is the white flesh of the coconut that has been dried then flaked or shredded. It can be found in sweetened or unsweetened varieties. Desiccated coconut may also be used in the protein ball in place of traditional flaked sweetened coconut.If purchasing traditional sweetened flake coconut, a few pulses in the food processor will give the coconut a more fine texture. Fine sea salt seasons the mixture evenly, while flaky salt adds a light crunch and finishing touch.
