A bright, fruity salsa that is ready in minutes! A perfect complement to many South of the Border dishes.
Ingredients
1cupfresh pineapple, finely chopped
¾ cuporange and/or red bell pepper, finely chopped
½small red onion, finely chopped
2jalapeños, stemmed and minced
¼cupcilantro, chopped
3tablespoonsfresh lime juice
2tablespoonsfresh orange juice
1 ½teaspoonssugar
1teaspoonkosher salt
Instructions
In a medium bowl, mix all ingredients. Serve at room temperature.
Notes
If serving later, mix all ingredients except red onion and cilantro. Store in an airtight container in the refrigerator. Add onion and cilantro just before serving. Adding red onion before serving keeps the color of the onion from bleeding into the salsa and discoloring it. Adding cilantro before serving keeps it from wilting.
