Ingredients
1cuppeanut butter
1/2cupchocolate protein powder
1/3cuphoney
2 1/4cupsold-fashioned oats
1cupunsweetened (or sweetened) shredded coconut
1cupdried fruit, chopped: Craisins, raisins, apricots, cherries, etc.
1cupnuts, chopped
1cupmini chocolate chips
1dashsalt
1teaspoonvanilla (optional)
Instructions
In the bowl of a stand mixer, using the paddle attachment, combine all ingredients and mix until thoroughly combined, scraping the sides of the bowl if needed.
Add more oats if the power bites are too sticky. Add water, 1 tablespoon at a time, if they are too dry. Using your hands or a small scoop, roll dough into 1-inch balls
Store in a plastic bag or an airtight container in the refrigerator for up to 1 month or in the freezer for up to 3 months.
Notes
For a smoother look, roll the power bites in your hands after using a cookie scoop.
