Pico de Gallo

Ingredients

  • 4 Roma or other tomatoes, about 1 lb seeded and chopped
  • 1 small onion about 1 cup chopped, white or sweet variety
  • 2 stems green onion chopped
  • 1/2 cup chopped cilantro
  • 1 jalapeno pepper seeded and chopped
  • 1 tablespoon fresh lime juice
  • 1 clove garlic optional
  • kosher salt and fresh ground pepper to taste

Instructions

  1. Mix all ingredients in a medium size bowl.
  2. Best if made at least one hour before serving.
  3. Serve at room temperature.
