To prepare BBQ sauce, combine ketchup, brown sugar, hot sauce, mustard, Worcestershire sauce, and pepper in a saucepan, Cook over medium heat for 4-5 minutes. Add more brown sugar or hot sauce as needed.
In a medium bowl, combine chopped chicken and ½ cup of the BBQ sauce. Spread ½ cup of the chicken on the bottom half of the pita bread. Top with ¼ cup Gouda, ¼ cup mozzarella, 1-2 tablespoons chopped cilantro leaves, and a few red onions. Drizzle 1 tablespoon of BBQ sauce on top of the chicken and cheese mixture.
To form a wrap, roll flatbread around the filling, wrap in parchment paper, and twist the ends to seal.
Microwave wraps 3 at a time, for 30 seconds or until the cheese is melted and the wraps are soft. Slice the wraps in half and serve.
