She filled a soft pita flatbread with juicy BBQ chicken, two types of cheese, fresh cilantro, and chopped red onion. It quickly became a hit at her bagel shop, and we’re sure you’ll agree it’s a must for you and your family!

Wrapped in parchment paper, these BBQ Chicken Pizza Wraps are perfect for meal prep, easy lunches, or packing in a cooler for your next outing. Simply slice them in half when you’re ready to eat. Make a batch in the morning, and they’ll be ready for your next adventure.

What Ingredients Do I Need?

The ingredient list is short, simple, and packed with flavor!

Greek Pita Flatbread: Greek pita adds a soft, chewy texture that tortillas just can’t match. We use white flatbread, but whole wheat adds a hearty, nutty flavor.

Chicken: Cook your chicken any way you like. Short on time? A rotisserie chicken makes this recipe even easier. We’ve included our quick homemade BBQ sauce recipe, but your favorite bottled BBQ sauce works just as well – we’re all about easy meal prep.

Cheeses: Yes, Cheeses is a word! We use two types of cheese for a combination of delicious flavors and textures. Mozzarella gives this wrap a pizza flavor while smoked Gouda pairs perfectly with BBQ chicken.

Cilantro and Red Onion: Cilantro is bright, herby, and fresh, while red onion brings crispness and a zesty bite.

This wrap is savory and flavor-packed in every bite!

Do I Eat These Wraps Hot or Cold?

Both! Just like pizza, these wraps are delicious warm or cold. We recommend heating them first so the cheeses melt and all the flavors come together. After that, they’re just as tasty eaten immediately or enjoyed later at room temperature.

What Should I Serve with BBQ Chicken Pizza Wraps?

BBQ Chicken Pizza Wraps

Ingredients 

Filling

  • 1 6 count package Greek pita flatbread
  • 3 cups chicken, cooked and chopped
  • 1 ½ cups smoked Gouda cheese, grated
  • 1 ½ cups mozzarella cheese, grated
  • 1 bunch cilantro, chopped
  • 1 cup red onion, diced or thinly sliced
  • Parchment paper

BBQ Sauce

  • 2 cups ketchup
  • ¾-1 cup brown sugar, packed
  • 5-8 drops Tabasco or hot sauce
  • 1 teaspoon dry mustard
  • 3 tablespoons Worcestershire sauce
  • Freshly ground pepper, to taste

Instructions

  • Lay flatbread on a countertop or cutting board. Using a rolling pin, roll the flatbread 3-4 times in one direction, then turn the flatbread 90 degrees and roll again, creating a flatter bread.
  • To prepare BBQ sauce, combine ketchup, brown sugar, hot sauce, mustard, Worcestershire sauce, and pepper in a saucepan, Cook over medium heat for 4-5 minutes. Add more brown sugar or hot sauce as needed.
  • In a medium bowl, combine chopped chicken and ½ cup of the BBQ sauce. Spread ½ cup of the chicken on the bottom half of the pita bread. Top with ¼ cup Gouda, ¼ cup mozzarella, 1-2 tablespoons chopped cilantro leaves, and a few red onions. Drizzle 1 tablespoon of BBQ sauce on top of the chicken and cheese mixture.
  • To form a wrap, roll flatbread around the filling, wrap in parchment paper, and twist the ends to seal.
  • Microwave wraps 3 at a time, for 30 seconds or until the cheese is melted and the wraps are soft. Slice the wraps in half and serve.

Notes

Store any leftover BBQ Sauce in the refrigerator for up to 3 months. 
If you’re in a hurry, skip making the homemade BBQ sauce and use a  bottle of your favorite BBQ sauce instead.
