A Game Changer
Believe it or not, most of my life I was not a big fan of the mint and chocolate flavor combination. My mom didn’t like mint, so she never served it. I could go my whole life and never give mint a second thought. Until one day, I tried a delicious scoop of mint ice cream that changed my mind forever. It was “mint love at first bite.” Then at a friend’s request, I made my first batch of mint and chocolate cookie ice cream. I added chopped Andes mints to take this recipe over the top! Oh, my word. This flavor is beyond delicious.
Summer Fun
What could be a more classic summer activity than making ice cream together with family and friends? While the barbecue is heating up, assign each guest to help mix, chop, and get the ice cream maker started. It’s always a treat to see the ice cream base thicken and create an amazing frozen dessert. Add the Oreos and Andes mints when the ice cream is almost finished and your gathering is sure to end on a sweet note!

Oreo Andes Mint Ice Cream
Ingredients
- 1 cup Oreo cookies, coarsely chopped
- 1/2 cup Andes chocolate mints, chopped
- 2 large eggs
- 3/4 cup sugar
- 2 cups heavy cream or whipping cream
- 1 cup whole milk
- 1 ½ teaspoons mint extract
Instructions
- Place cookies in bowl. Cover and refrigerate.
- Whisk the eggs in a mixing bowl until light and fluffy, 1-2 minutes.
- Whisk in sugar a little at a time, then continue whisking until completely blended, about 1 minute.
- Pour in the cream and milk and whisk to blend. Add the peppermint extract and blend again.
- Transfer the mixture to an ice cream maker and freeze following manufacturer’s directions.
- After the ice cream stiffens (about 2 minutes before it is done), add the chopped cookies and mints, then continue freezing until the ice cream is ready.
- Makes a generous 1 quart.
