When time is short, and I need to make a treat, I throw together these Super Simple Cream Cheese Brownies. They are seriously rich and amazing.
The base is from a cake mix, the rest is up to you. My favorite basic chocolate frosting gives this dessert an extra special home made touch.
Super Simple Cream Cheese Brownies
Ingredients
Brownie layer
- 1 Butter Recipe Chocolate Cake Mix*
- 1/2 cup melted butter
- 1 large egg, beaten
- 3-4 tablespoons milk
Cream cheese layer
- 8 oz. cream cheese, room temperature, not low fat
- 2 large eggs, beaten
- 2 cups powdered sugar
- 2 tablespoons all purpose flour
Creamy Chocolate Frosting
- 1/2 cup butter, softened
- 2/3 cup unsweetened cocoa
- 3 cups powdered sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1/3 cup half and half or milk
Instructions
- Preheat oven to 350 degrees.
- Place cake mix, 1/2 cup melted butter, 1 egg and 3-4 tablespoons milk in a large bowl. Spread mixture into a 9×13 greased pan.
- Beat softened cream cheese until smooth. Add eggs. Mix in powdered sugar and flour, until all ingredients are incorporated. Spread over brownie mixture in pan.
- Bake at 350 degrees for about 30 minutes, or until toothpick inserted in center comes out with a few moist crumbs attached. Let cool completely.
Frosting
- Beat butter until smooth, and add unsweetened cocoa, powdered sugar, salt and vanilla. Mix in half and half a little at a time, until frosting is desired consistency. Spread over top of the cooled brownie.
Notes
- I have used various chocolate cake mix brands, all work well in this recipe.
- Don’t be concerned about the appearance of the brownies after they are finished baking. Once they are frosted, the top of the brownie is covered in frosting.
- If the edges of the brownie rises up more than the middle of the brownie while baking, use a spatula and push the edges down while still warm just after removing from oven.
- f you are in a hurry, place the brownies in the freezer (after they have cooled enough to handle the pan). They will cool in about 20 minutes.

Are you supposed to add cake mix only or the rest of the ingredients on the box too? I only added the mix and it was pretty hard to spread around. Also, it seemed to take longer than 30 minutes. Otherwise, they were good. Thanks

IN the first step it should be the cake mix, butter, egg and milk listed in the ingredients on the recipe. I hope this clarification helps!

Misty, I know it looks like you sandwich the cream cheese layer…but no, just spread the brownie layer in first, then top with the cream cheese layer. Frost on top.

Yes, Steffanie, you may use any type of chocolate cake mix. I would stick with Betty Crocker (who makes a butter recipe, if you can find it), or Duncan Hines. Glad you love the lemon bread!

I looked all over but wasn't able to find a Butter Recipe Chocolate Cake Mix. Can I just use a regular chocolate cake mix and substitute butter for the oil? I have made you lemon bread twice now-Love It!!!
