ABK’s Gruyère and Bacon Egg Bites are perfect for a quick breakfast any time of the year! They are easy to make, and freeze well when you’re in a hurry and want a healthy heat and eat meal.
Same Dreamy Texture, lots of protein
Starbucks uses a sous vide method to create their creamy-smooth egg bite texture. To create that same wonderful consistency, this recipe uses eggs blended with cottage cheese and is then steam baked in the oven. With two types of cheeses, eggs and bacon, these muffin-sized bites provide loads of protein in every mouthful.
Egg Bites – Let’s Compare Cost
Inspired by Starbucks’ egg bites, the recipe delivers the same great taste at a fraction of the cost. Costco sells Starbucks Egg Bites at half the cost of a Starbucks store; ABK’s recipe is less than half of Costco’s price! I agree, sometimes it’s worth the cost of buying a quick meal, but this recipe is so simple, it’s worth the time to make a batch or two.
Blend and Bake
It can’t get more effortless than this: Blend three ingredients, pour into a muffin pan, sprinkle with crumbled bacon, and bake. In less than half an hour you’ll be enjoying a warm, satisfying breakfast. Once these egg bites are in your refrigerator or freezer, just microwave when you’re ready to eat.
Only 4 ingredients and No Salt?
I know! It sounds too simple to be tasty! Our Gruyère and Bacon Egg Bites are a creamy, delicious breakfast or snack. But no salt? With bacon, cottage cheese and Gruyère cheese, we found no added salt is necessary. They taste great as is! Yes, you can add pepper if you’d like. Enjoy!

Gruyère and Bacon Egg Bites
Ingredients
- 8 large eggs
- 1 ¼ cups cottage cheese
- ⅔ cup (3 ounces) Gruyère cheese, shredded
- 4 strips bacon, cooked and crumbled
Instructions
- Place one rack in the center of the oven, with a second rack at the bottom. Preheat the oven to 325 degrees.
- Spray a muffin pan generously with nonstick cooking spray and set aside.
- Bring 1-2 quarts of water to a boil in an electric kettle or in a saucepan on the stove.
- Add eggs, cottage cheese, and shredded Gruyère to a blender and blend for 30 seconds – this is important for achieving the correct texture.
- Pour the egg mixture into the prepared muffin cups, dividing equally between the 12 cups. The egg mixture may be filled nearly to the top.
- Sprinkle the cooked bacon pieces evenly over each egg bite.
- Place an empty 9×13-inch pan on the lowest rack of the oven. Pour the boiling water into the 9×13-inch pan until the pan is half filled with water.
- Place muffin pan on the center rack of the oven.
- Bake just until the eggs are firm, about 25 minutes.
- Egg bites will rise while cooking and then settle a bit while cooling. Allow the egg bites to cool for 3-5 minutes in the pan before running a small rubber spatula or spoon around the edges to loosen and remove.
- Serve immediately.

Are you using a regular sized muffin pan or a mini muffin size? Hard to tell from the photos.

Yes, we are using a regular sized muffin pan. You can add as much or as little as you would like to the pan, just be careful so they don’t overflow!
