Carole Merrill’s Famous Frosted Brownies are legendary in our neighborhood. My dear friend Carole has made these brownies for years! They are affectionately called “Carole Merrill Brownies” by all who live in our Bountiful neighborhood.

The Story Behind These Brownies
Carole has made these brownies over 1,000 times! For as long as we can remember, “Carole Merrell Brownies” have appeared at every funeral, graduation, birthday, wedding, new baby arrival, mission farewell, homecoming, and baptism. Carole stirred a lot of love into each batch she baked. Carole (or her dear husband Keith) appeared at the door with a plate or two of her famous brownies for every event. She never asked if she could bring something; she simply baked and delivered. We love Carole, and her famous frosted brownies are a sweet reminder of the generosity she shares with our neighborhood family.

Best Tips to Make Rich Chocolate Brownies
- This recipe calls for melting the butter with cocoa before mixing with sugar. This produces a rich texture.
- Using room temperature eggs helps incorporate the ingredients easily.
- It’s important to mix or fold ingredients just until combined. Over-stirring will add air to the batter and create a cake-like consistency.
- Melting the butter with cocoa for the frosting produces a creamy, smooth texture – different from buttercream. It’s divine.
- Don’t overbake. The brownie will continue to set as it cools.

What Type of Cocoa do you Recommend?
Hershey’s Natural Unsweetened Cocoa Powder is recommended for this recipe, and we use it in many of our recipes, such as Fudge Brownie Pie, Chewy Chocolate Ginger Cookies, and Best German Chocolate Bundt Cake. Dutch process cocoa is also fantastic and gives a darker color and rich flavor without tasting bitter.

What Ingredients Do I Need? (They’re probably in your kitchen right now!)

I’m going to try these this week! Have you tried to double this recipe? Did it work out? And if so, what size of pan would you bake them in?
Thanks so much!
Joni

Hi Joni!
Yes you can definitely double this recipe and it will work! Use a half sheet jelly roll pan if you plan to double it.
Happy Baking!

This was such a fun find! Carole is my aunt! I was reading through this and thought, there’s no way, is she talking about “my” aunt Carole? I will echo, loudly, everything that was said about these amazing brownies, they are like nothing you will ever eat! They are magic! It wasn’t a family party without them. She would make a huge pan and we emptied it every time. Thank you for the happy memory of my childhood years. Aunt Carole is one of my favorite women on this earth and has a million reasons to be admired. It doesn’t surprise me at all to hear about her quietly serving and loving her neighbors. To those reading, make these brownies, they will change your life!!

Carole is my sister and our family as well have been recipients of her famous brownies. At every family gathering we couldn’t wait to break out them out. I’m so glad she has been sharing her love and brownies throughout her neighborhood!

First of all, I have your cookbook and love it. When I ordered it, I wasn’t sure I would keep it. I own over 300 cookbooks and I have to be very picky because of space. I kept yours, and it sits out in my kitchen on the counter above a bookcase full of cookbooks.
My latest recipe from your book was the German chocolate Bundt cake, it was a big hit.
My question on this recipe is:: are these brownies cakey or fudgy? From the pictures they look cakey.
I’d love to give this recipe a try, but I’m a fudgy brownie gal.
Please advise

Hi jk!
The ABK Team has been searching for the perfect words to describe this brownie, and here’s what we’ve decided: it’s rich, dense, and moist. While it isn’t fudge-like or gooey, it’s too moist and to call “cakey.” The layer of frosting adds to its moistness and flavor. Just be sure not to overbake. This is one brownie you’ll definitely want to try! Let us know what you think. Thank you for the kind words about the cookbook. That Bundt cake is a favorite!
Jillian
Hello Friend!
They are the perfect mix of cake and fudge. I love the softness of the chocolate but also the richness of it. I recommend trying it out and seeing if you like it!
Best,
