Simply combine all ingredients and bake, but before you do…feel free to swap out the sausage for bacon, ham, or your favorite breakfast meat; switch our recommended cheeses for your favorites; and create this breakfast to suit your taste!

How to make tater tot Casserole crispy
Tater tots will soften when covered with other ingredients. We use a trick that creates soft, warm Tater Tots as well as a “crispy tot” crunch that we all love. Here’s how: place half the tater tots in the dish and cover with the egg mixture, meat, and cheese. Then place the remaining tots on top, which helps keep the top layer of tater tots crispy and crunchy. Sprinkle with shredded cheese and you’ve got a breakfast to rave about! If you want softer tots, place all the Tater Tots on the bottom of the pan and cover with the egg mixture before baking.

What to serve with breakfast casseroles?
We often serve this savory casserole along with fresh fruit and muffins. Can THIS Breakfast Casserole be Frozen?
Yes! This recipe is best when baked first, then frozen. On the day of serving, take the casserole out of the freezer and let sit on the counter, uncovered, for about 1 hour. Then preheat the oven and bake, COVERED, at 325 degrees for about 30 minutes or until warmed through.

Easy Tater Tot Breakfast Casserole

Ingredients
- 1 pound sausage
- 1 (30-32 ounce) bag frozen tater tots, divided
- 10 eggs
- 1 cup whole milk
- 1/2 cup plain Greek yogurt
- 1 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 ½ cups cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 3-4 green onions, chopped (optional)
Instructions
- The night before serving, grease a 9×13-inch pan.
- Brown sausage in a skillet over medium-high heat. Remove sausage to a plate lined with paper towels.
- In a large bowl or blender, combine eggs, milk, yogurt, pepper, garlic powder, and onion powder.
- Place half the bag of tater tots evenly in the pan.
- Distribute cooked sausage evenly over the tater tots.
- Stir 1 cup of cheddar cheese and the mozzarella cheese into the egg mixture. Pour cheesy egg mixture over the tater tots.
- Top with remaining tater tots. Gently press the tater tots into the egg mixture. Sprinkle with remaining cheese.
- Cover with foil and store in the refrigerator overnight.
- When ready to bake, preheat oven to 350 degrees and remove casserole from the refrigerator.
- Leave foil on the casserole and bake for 30 minutes. Uncover and bake for an additional 30 minutes or until the center is set. Let rest 10 minutes.
- Sprinkle with chopped green onions before serving.

Made this recipe today to go along with our traditional Conference Crepes and it was a big hit! I’ve long been a fan of breakfast casseroles with hash browns, but tator tots take breakfast casseroles to a whole new level. The tator tots bring a much better texture and flavor than either shredded or diced potatoes. And yes – it is so easy! Great recipe – we’ll be making this again and again.
(p.s. I know we don’t love it when people do this [please forgive] but for whatever it’s worth, one thing I’ll tweak next time is layering the cheese over the sausage layer, then pouring the egg/milk mixture over for a more even distribution rather than mixing the cheese in with the egg/milk mixture.)
