Pasta with Tomato Cream Sauce is my go-to when I have 20 minutes to get dinner on the table and want to eat something other than leftovers or a quesadilla!
One key to making quick meals (without running to the grocery store daily) is to keep your pantry/fridge/freezer stocked with the basics. I try to have milk, bread, eggs, cheese, and butter on hand at all times. A variety of meals can be made quickly if your kitchen is stocked! Here are a few of our favorite pantry friendly meals…
Southwest Soup is a quick and easy pantry friendly meal. Served with fresh avocado, tortilla chips and cheese for a complete meal!
White Chicken Chili is a 20 minute meal perfect for cool days and will feed a big crowd if doubled.
Keeping the pantry shelf stocked with dry pasta (Spaghetti, Angel Hair, and Egg Noodles), canned tomatoes, tomato sauce, tomato paste, chicken and beef broth, seasonings such as dried basil, parsley, oregano, or dried Italian seasoning and chili powder, garlic, salt and pepper will give you several options for dinner. I suggest keeping at least 6 chicken breast halves, 2-3 lbs of ground beef and a loaf of bread in the freezer at all times. Half and half or heavy cream are also great additions to the milk, eggs, cheese and butter you want to keep in your fridge. A few vegetables I try to keep on hand are potatoes, carrots, onions. These come in handy when making soups and many casseroles!

To make sure you’re prepared for making meals, round up a few of your favorite easy to make recipes your family loves. Make a list of the non-perishable items, such as canned goods, dry spices and herbs. Then buy proteins and freeze anything you won’t be using right away.

Pasta with Tomato Cream Sauce
Pasta with Tomato Cream Sauce is quick and easy and filled with all things we love, cheese, pasta, tomatoes and cream!
Ingredients
- 2 tablespoons butter
- 2-3 tablespoons olive oil
- 4 cups or 2 -12 oz cans chopped tomatoes, not drained
- 1 clove garlic, minced, fresh or prepared
- salt and pepper
- 1/2 cup heavy cream or half and half I recommend cream
- 1 cup grated parmesan
- 3/4 lb dry pasta or fresh 20 oz pasta*
- 1/3 cup fresh basil or 2 tablespoons dried basil
Instructions

Start water boiling on stove. When water is boiling, add pasta and cook while preparing sauce.

Place butter and olive oil into a large saute pan over medium high heat.

Add the tomatoes to the pan, saute for 5 minutes. Add garlic. Saute another minute.

Add salt ,pepper, and cream. Taste and adjust seasoning.

Drain the pasta (saving some of the water for sauce) add cooked pasta to tomato cream sauce. Lightly toss the pasta and sauce together.

Add Parmesan cheese and basil. Toss again. Serve immediately.
If the sauce is too thick, add a few tabelspoons of hot pasta water to thin sauce.
