From Si:
“This recipe takes just a few minutes to throw together … and a little bit of cooking time, depending on how crunchy you like it. It keeps for weeks stored in canisters or ziplock bags, if you can keep yourself from taking a handful every time you walk by!
My friend Karen shared this recipe with me and it was one of the first recipes I posted on A Bountiful Kitchen.”

Ingredients for Peanut Butter Granola
Old fashioned oats – high in fiber for a perfect base.
Shredded coconut brings sweetness with a toasty flavor.
Nuts/seeds are crunchy, high in protein, and loaded with flavor.
Wheat germ gives a nutty crunch with added fiber and protein.
Brown Sugar adds a rich, sweet taste.
Raisins give a chewy, natural sweetness.
Water, oil, honey, peanut butter, and vanilla cook together to create a creamy, nutty coating that will crisp up the granola as it bakes.

How to make peanut butter granola
1. Mix in an extra-large bowl or container, to make stirring and coating the granola ingredients easier.
2. Prep the baking sheets with parchment paper for easy cleanup.
3. Add raisins after the granola cools to keep them soft and chewy.
4. If you prefer chunky granola, press the wet granola down a bit before baking and don’t stir very often while cooking.
5. Granola gets crunchier as it cools – keep that in mind while baking.

Peanut Butter Granola Recipe

Ingredients
- 8 cups old fashioned oats
- 1 ½ cups brown sugar
- 1 ½ cups wheat germ
- 2 cups shredded coconut
- 1 2/3 cups pecans or almonds
- 1 ⅔ cups cashews
- 1 ⅔ cups sunflower seeds, shelled
- ½ cup water
- ½ cup avocado, coconut or canola oil
- ½ cup honey
- ½ cup peanut butter
- 2 teaspoons vanilla
- 1-2 cups raisins, optional
Instructions
- Preheat the oven to 300 degrees. Prepare 2 baking sheets with parchment paper or cooking spray.
- In an extra large bowl or container, mix oats, brown sugar, wheat germ, coconut, nuts, and sunflower seeds.
- In a medium saucepan, stir together water, oil, honey, peanut butter, and vanilla. Heat just until all ingredients are mixed well and smooth.
- Pour peanut butter mixture over the dry ingredients and stir with a large wooden spoon. Spread on the prepared baking sheets.
- Bake for 1 to 1 ½ hours, stirring or folding every 20-30 minutes. Check granola more often toward the end of baking as it can quickly overcook. Granola will become more crunchy as it cools.
Notes
- Measure the oil first, then the honey and the peanut butter. The oil helps the other ingredients slide out of the measuring cup easily.
- The nuts can be any type of nut or seed, measured to the amount called for in the recipe.
- This recipe may be frozen after cooked. Once the granola is cooked and cooled, store in airtight container. If freezing, place in Ziplock bag or other storage container, label and freeze for up to 6 months.
Equipment
- 2 baking sheets

Homemade peanut butter granola is SO much better than store-bought! Love controlling the sweetness and crunchiness. The clusters look perfect. Going on my weekly batch cooking list!
