a Trick from the Rodeo – how to assemble walking tacos

As we all know, bags of chips are getting smaller and smaller. We tried this recipe with 1-ounce bags and found it hard to dig down to the chili and chips when all of the toppings were added. What to do?

While checking out food at the Houston rodeo, we stumbled across a stand selling walking tacos. At the rodeo, they opened the chip bag differently: instead of opening the top, they turned the bag sideways and cut it down the side. This method creates a larger, more stable bowl, making it easier to fill with taco toppings and enjoy without a mess. Genius!

Let’s Talk Chips- what chips are best for walking tacos?

Our Easy Walking Tacos Recipe starts with chips. We’ve tried this recipe with Fritos, all flavors of Doritos, and even Cheetos. Take your pick. Amazon sells a 21-pack box of “Doritos Top N Go” chips, packaged in larger 1.4-ounce bags that open on the side. Costco sells a box with larger individual bags if you like larger sized portions.

We have loved our ABK 15 Minute Chili for years. It really is that fast to make, and full of flavor. The recipe makes 11 cups of chili – and does not disappoint. Double the batch for your soccer team or family gathering.

We love the classics: shredded lettuce, cheese, sour cream, tomatoes, and salsa. Other delicious toppings include chopped green onions, jalapeños, sliced olives, diced peppers, avocado, and corn. Let guests to choose their favorite toppings and combine flavors they’re sure to enjoy!

Easy Walking Tacos Recipe

Ingredients 

Measurements are per serving to help calculate for large or small crowds

  • 1 recipe Quick and Easy 15 Minute Chili, makes 11 cups chili (½-¾ cup per serving) recipe linked in post
  • 15 1-2 ounce bags Fritos or Doritos, any flavor
  • 2 cups grated cheddar cheese, (2 tablespoons per serving)
  • 5 cups shredded romaine or iceburg lettuce, (⅓ cup per serving)
  • 2 cups chopped tomatoes, (2 tablespoons per serving)
  • 1 cup sour cream , (1 tablespoon per serving)
  • 1 cup chopped green onion, (1 tablespoon per serving)
  • additional toppings: sliced olives, diced peppers, jalapeños, corn, ranch dressing, guacamole, salsa

Instructions

  • Prepare one batch Quick and Easy 15 Minute Chili
  • Gently squeeze each bag of chips to crush the chips a bit.
  • With a pair of scissors, cut each bag of chips down the side of the bag and place bags of chips in a basket or tray.
  • Place chili and each topping in individual bowls and arrange on a table with serving utensils. Serve buffet-style.
  • We like to add cheese to the bag first, and then the chili. This allows the heat of the chili to melt the cheese. Add additional toppings as desired. Serve with a disposable fork for easy clean up!

Notes

  • Walking Tacos can be made for a small family, or a large crowd.
  • If cooking for a smaller group, the remaining chili can be frozen for up to 4 months. 
  • Alternative to bags of chips, use disposable bowls and one large bag of chips.
